Bananas Foster Pancakes

Recipe Introduction
"Bananas Foster was created at Brennan's, the famed New Orleans restaurant. The bananas are sautéed in brown sugar and rum, then everything is dramatically flambéed tableside and topped with a scoop of ice cream. I removed the danger of flames but kept all of those great flavors. Starting with frozen pancakes means you're already halfway there. If making these for kids, replace the rum with an equal amount of apple, white grape, or orange juice."

â—¦ 8 (4-inch) frozen pancakes, thawed
â—¦ ½ cup (1 stick) unsalted butter
â—¦ ½ cup (packed) light brown sugar
â—¦ 1 teaspoon ground cinnamon
â—¦ â…“ cup dark rum
â—¦ ½ teaspoon banana extract
â—¦ 4 bananas, peeled and sliced into ¼-inch-thick rounds
â—¦ ½ cup chopped toasted walnuts (optional)
Recipe
Bake the pancakes in the oven or in the microwave according to the package instructions.
Melt the butter, sugar, and cinnamon in a skillet over low heat. Stir constantly until the sugar dissolves, about 4 minutes. Increase the heat to medium, stir in the rum and banana extract, and cook until the sauce thickens, 3 to 4 minutes.
Add the bananas and cook, stirring gently, until they are soft but still hold their shape, 3 to 4 minutes. Pour the banana syrup over the pancakes and top with toasted walnuts, if desired.
