    Blackberry Crisp Baked Oatmeal

    Recipe Introduction

    "Years ago, if you would have told us that mornings would be our favorite time of day we would have laughed, but it's true! There's not much we'd rather do than start our days together as a family with blackberry crisp baked oatmeal."

    List of Ingredients

    â—¦  3 cups old-fashioned oats
    â—¦  2 teaspoons baking powder
    â—¦  ½ teaspoon salt
    â—¦  1 large egg
    â—¦  2 cups skim milk
    â—¦  ¼ cup coconut oil, melted
    â—¦  â…“ cup apple butter
    â—¦  ¼ cup granulated sugar
    â—¦  1 cup brown sugar, divided
    â—¦  2 tablespoons whole wheat flour
    â—¦  2 tablespoons all-purpose flour
    â—¦  ½ cup walnuts or pecans, chopped fine
    â—¦  ¼ cup (½ stick) cold butter
    â—¦  ½ teaspoon ground cinnamon
    â—¦  2 cups frozen blackberries
    â—¦  Heavy cream or yogurt for garnish

    Recipe

    Preheat oven to 400 degrees F and coat an 8 x 8-inch baking pan with nonstick spray.

    In a medium bowl, stir together the oats, baking powder, and salt. In a large bowl, whisk together the egg, milk, coconut oil, apple butter, granulated sugar, and ¼ cup of the brown sugar. Stir in the oats.

    Pour mixture into prepared baking dish and bake 20 minutes.
    While mixture bakes, prepare a crumb topping by combining remaining ingredients, except berries, in a small bowl.

    Remove mixture from oven and carefully fold in frozen berries. Top with prepared crumb topping and bake an additional 18 to 20 minutes, or until the top is golden in color.

    Drizzle with cream or a dollop of yogurt to serve.

    Serves 4 to 6
