    Blueberry-Vanilla Buttermilk Waffles

    List of Ingredients


    • 1-3/4 cups flour
    • 1/3 cup sugar
    • 2 tsp baking powder
    • 1/2 tsp baking soda
    • 1/4 tsp ground nutmeg
    • Dash kosher or sea salt
    • 1-3/4 cups lowfat buttermilk
    • 1/2 cup unsalted butter, melted
    • 1 Tbsp vanilla extract
    • 2 egg yolks
    • 1/2 cup fresh blueberries
    • 2 egg whites


    Instructions


    1. In a medium bowl, combine flour, sugar, baking powder, baking soda, nutmeg and salt. In a small bowl, combine buttermilk, melted butter, vanilla extract, egg yolks and blueberries, and mix well.

    2. In a small bowl, beat egg whites until stiff peaks form. Combine buttermilk mixture with flour mixture. Then fold beaten egg whites into the batter and mix gently just until combined.

    3. Preheat waffle iron. When waffle iron is ready, spoon approximately 7 tablespoons (for a 7-inch waffle iron) onto griddle. Close top and cook until golden brown on both sides and center is cooked. Remove with fork and serve immediately, or keep warm in oven at 200° F until ready to serve.

      Makes 6 waffles.
