    Breakfast Banana Spice Bread

    Adapted from "Baking for Dummies"


    List of Ingredients


    • 3/4 cup chopped pecans
    • 1/2 cup brewed coffee, warm or cold
    • 2-3/4 cups flour
    • 2 tsp baking powder
    • 1/4 tsp baking soda
    • 1/2 tsp salt
    • 3/4 tsp ground nutmeg
    • 1/2 tsp ground cinnamon
    • 1/4 tsp ground allspice
    • 3/4 cup granulated sugar
    • 1/2 cup packed dark or light brown sugar
    • 1/2 cup vegetable oil
    • 2 eggs
    • 1 tsp vanilla extract
    • 2 medium-size ripe bananas, peeled and mashed
    • 1/2 cup buttermilk


    Instructions


    1. Spray a 9x5-inch loaf pan with cooking spray (or line the bottom of the pan with a piece of parchment paper cut to fit). Spray again with cooking spray. Set aside. Preheat oven to 350 degrees (F).

    2. Toast the pecans in a dry skillet over medium heat until fragrant, about 5 minutes. Set aside to cool.

    3. Sift together the flour, baking powder, soda, salt, nutmeg, cinnamon and allspice. Set aside.

    4. In a large bowl, beat together the granulated and brown sugars, oil, eggs and vanilla until light and creamy, about 2 minutes. Add the dry ingredients, beating just to blend. Then add the coffee, bananas and buttermilk all at once. Beat just until blended. Stir in the pecans.

    5. Transfer the batter to the prepared pan. Bake about 1 hour. A toothpick inserted into the center of the loaf should come out clean. Let the bread cool on a rack for 10 minutes before removing from the pan. Let cool completely before slicing.

      Makes one 9x5-inch loaf.



    Final Comments


    Alternatively, you can use 4 (5-1/2 x 3-1/2-inch) mini loaf pans instead of the single 9x5-inch loaf pan. If you do, test for doneness at 40 to 45 minutes, instead of an hour.
