Breakfast Scramble Muffins

List of Ingredients
- 3 cups frozen hash browns, thawed
- 3 Tbsp melted butter
- â…› tsp salt
- ½ tsp black pepper, divided
- ½ pound bulk pork sausage
- 6 eggs
- ½ cup chopped onion
- ¼ cup chopped green pepper
- ¼ tsp garlic powder
- 1 cup shredded Cheddar cheese
- Chopped green onions for garnish
Instructions
- Preheat oven to 400°F.
In a bowl, combine hash browns, butter, salt, and ¼ teaspoon black pepper. Press mixture into bottom and up sides of greased muffin cups. Bake 12 minutes or until lightly browned.
- In a large skillet, cook sausage over medium heat until no longer pink; drain.
- In a large bowl, beat eggs. Add onion, green pepper, garlic powder, and remaining ¼ teaspoon black pepper. Stir in sausage and cheese. Spoon by â…“-cupfuls into muffin cups over hash browns. Bake 15 to 20 minutes, or until set, and a knife inserted near center comes out clean.
