    Breakfast Scramble Muffins

    List of Ingredients


    • 3 cups frozen hash browns, thawed
    • 3 Tbsp melted butter
    • â…› tsp salt
    • ½ tsp black pepper, divided
    • ½ pound bulk pork sausage
    • 6 eggs
    • ½ cup chopped onion
    • ¼ cup chopped green pepper
    • ¼ tsp garlic powder
    • 1 cup shredded Cheddar cheese
    • Chopped green onions for garnish


    Instructions


    1. Preheat oven to 400°F.
      In a bowl, combine hash browns, butter, salt, and ¼ teaspoon black pepper. Press mixture into bottom and up sides of greased muffin cups. Bake 12 minutes or until lightly browned.

    2. In a large skillet, cook sausage over medium heat until no longer pink; drain.

    3. In a large bowl, beat eggs. Add onion, green pepper, garlic powder, and remaining ¼ teaspoon black pepper. Stir in sausage and cheese. Spoon by â…“-cupfuls into muffin cups over hash browns. Bake 15 to 20 minutes, or until set, and a knife inserted near center comes out clean.

      Makes 12 muffins
