    Breakfast Tostadas

    Recipe Introduction

    "Swap your regular breakfast toast for tostadas piled high with scrambled eggs. The sour cream and guacamole are optional, but we highly recommend them for maximum breakfast impact."

    List of Ingredients

    â—¦ ¼ cup vegetable oil
    â—¦ 2 plum tomatoes, cored, seeded, and finely chopped
    â—¦ 2 jalapeños, finely chopped
    â—¦ 1 white onion, finely chopped
    â—¦ Kosher salt and freshly ground black pepper
    â—¦ 12 large eggs, lightly beaten
    â—¦ ¼ cup finely chopped fresh cilantro leaves, plus more for serving
    â—¦ 8 tostadas
    â—¦ 1 ½ cups canned refried black or pinto beans
    â—¦ ½ cup shredded Pepper Jack cheese (2 ounces)
    â—¦ Sour cream and guacamole, for serving (optional)

    Recipe

    Preheat the broiler.

    In a large nonstick skillet, heat the vegetable oil over medium-high heat. Add the tomatoes, jalapeños, and onion, season with salt and pepper, and cook, stirring, until soft and beginning to brown, about 8 minutes.

    Add the eggs, reduce the heat to medium, and cook, stirring occasionally, until cooked through, 12 to 15 minutes. Remove the skillet from the heat and stir in the cilantro.

    Arrange the tostadas on a baking sheet and broil, flipping once halfway through, until lightly golden and fragrant, about 1 minute total.

    Spread 3 tablespoons of the beans evenly over each tostada. Divide the scrambled eggs among the tostadas, piling them in the center of the beans, then sprinkle evenly with the cheese. Broil until the cheese is just melted, 1 to 2 minutes. Transfer the tostadas to plates and garnish with more cilantro. Serve hot, with sour cream and guacamole on the side, if you like.
