    Brown Sugar and Pepper Glazed Bacon

    â—¦ 1 pound thick-sliced bacon
    â—¦ 1 tablespoon Dijon mustard
    â—¦ 3 tablespoons brown sugar
    â—¦ 2 teaspoons balsamic or cider vinegar
    â—¦ ¾ teaspoon coarse-ground black pepper

    Recipe

    Preheat oven to 350° F.

    Lay out the bacon on a sided baking sheet (jellyroll pan). Bake in oven until about three-quarters of the way done. (I used Hormel thick-sliced bacon, which had about 14 slices in the pound, and it took 24 minutes to par-bake it.) Let bacon cool slightly.

    Meanwhile, in a very small saucepan or in the microwave, combine and heat mustard, brown sugar, vinegar, and pepper until smooth and warmed.

    Remove bacon to paper towels to dab off grease; then lay out bacon in a single layer on another sided baking sheet. Using a pastry brush, brush each slice of bacon with some of the glaze.

    Preheat oven to 425° F.
    Bake bacon for about 6 to 8 minutes or until crispy and glazy. Serve immediately.
