Buttermilk 'n' Honey Pancakes

- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 large egg, lightly beaten
- 1 cup buttermilk
- 2 Tbsp dark honey
- Pecan-Honey Butter (optional; recipe follows)
Instructions
- Stir together first 4 ingredients in a medium bowl. Add egg, buttermilk and honey, stirring until well blended.
- Pour 1/4 cup batter onto a hot, lightly greased griddle or skillet. Cook 1 to 2 minutes or until top is covered with bubbles and edges look cooked. Turn and cook 1 more minute.
- Repeat with remaining batter. Top pancakes with Pecan-Honey Butter, if desired.
Makes about 13 (3-inch) pancakes.

PECAN-HONEY BUTTER
• 1/2 cup butter, softened
• 1/3 cup finely chopped pecans, toasted
• 2 Tbsp wildflower honey
• 1/8 to 1/4 tsp ground cinnamon
Stir together all ingredients until blended. Cover and chill until ready to serve.
Makes about 3/4 cup.
