SAUSAGE GRAVY
• 3/4 pound ground pork sausage
• 1/4 cup all-purpose flour
• 2 cups half-and-half or milk
• 1 tsp salt
• 1/2 tsp freshly ground pepper
Brown sausage in a large heavy skillet, stirring until it crumbles. Drain sausage on paper towels, reserving 1/2 cup drippings in skillet.
Whisk flour into sausage drippings until smooth; cook over medium-high heat, whisking constantly, 3 minutes or until browned.
Stir in sausage. Gradually add half-and-half, and cook over medium heat, stirring constantly, until thickened and bubbly. Stir in salt and pepper. Serve gravy with biscuits.
Makes 3 cups.
Final Comments
When making biscuits, chill the shortening before cutting it into the dry ingredients. It's a step toward flaky biscuits.
