Recipe Introduction
"Reading through some old James Beard columns, I came across a reference to a once popular sandwich he called a Cheese Dream — a combination of cheddar cheese, sliced tomato, and bacon. Inspired by that thought, I spun off this breakfast version, and let me tell you, our friends with the golden arches have nothing on this. If your tomatoes aren't garden-fresh, they might benefit from a quick flash in the pan with the bacon."

â—¦ 1 ½ tablespoons pure maple syrup
â—¦ 1 tablespoon water
â—¦ 2 teaspoons lemon juice or apple cider vinegar
â—¦ 1 ½ teaspoons Dijon mustard
â—¦ Pinch of ground cloves
â—¦ Pinch of cayenne pepper
â—¦ 1 tablespoon butter
â—¦ 2 thick slices Canadian bacon
â—¦ 1 English muffin, halved and toasted
â—¦ 2 eggs, fried over hard
â—¦ 2 thick slices tomato
â—¦ 1 cup grated cheddar cheese, preferably smoked
Recipe
In a small bowl, whisk together the maple syrup, water, lemon juice, mustard, cloves, and cayenne.
Melt the butter in a heavy skillet over medium heat and add the bacon. Fry gently, about 1 minute per side, then pour in the sauce. Increase the heat and continue to cook until the liquid is reduced to a thick glaze. Remove from the heat.
Preheat the broiler. Place the toasted muffin halves in a pie plate. Swish the bacon slices in the glaze, then lay a slice on each muffin half. Top each with a fried egg and a slice of tomato, then spread the cheese over the top. Broil just until the cheese melts. Serve at once.
