    Breakfast or Brunch Casserole

    List of Ingredients


    • 9 eggs
    • 3 cups milk
    • Salt and pepper to taste
    • 1/2 tsp dry mustard
    • 1 tsp crushed garlic
    • 1/2 cup salsa (mild, medium or hot)
    • 2 lbs. shredded frozen hash browns, thawed
    • 2 cups shredded cheese
    • 2 cups diced ham, cooked sausage or diced, cooked bacon
    • 1/2 cup chopped green onions
    • Sour cream
    • Salsa


    Instructions


    1. In a very large bowl, whip eggs; then blend in milk, salt and pepper, dry mustard, garlic and 1/2 cup salsa, mixing well.

    2. Add hash browns, cheese, ham (or sausage or bacon) and chopped green onions. Mix ingredients thoroughly until evenly distributed, then turn into a 9x13-inch metal baking pan. Cover and refrigerate overnight, or at least for several hours.

    3. Remove from refrigerator, uncover and bake at 350 degrees (F) about 1-1/2 hours. To serve, cut into squares and top each with a dollop of sour cream and salsa.
