    Julie's Breakfast Casserole

    List of Ingredients


    • 2 Tbsp butter, melted
    • 1 pkg. (1-1/2 lbs.) frozen hash browns*
    • 2 lbs. spicy sausage
    • 2 cups chopped onions
    • 2 cups sliced mushrooms
    • 2 cups shredded sharp Cheddar cheese
    • 10 eggs
    • 2 cups milk
    • 1/4 cup Dijon mustard
    • 1 tsp nutmeg
    • Salt, pepper


    Instructions


    1. Cover the bottom of a 10x13-inch baking dish with the butter. Top with the potatoes.

    2. Cook the sausage, onions and mushrooms until the sausage loses its redness; spread over the hash browns.

    3. Mix the remaining ingredients in a blender and pour over the other stuff. Bake in a 350-degree oven for one hour, or until the egg is set.

      Serves 12 to 16

      * If you can find them, buy the O'Brien hash browns with peppers and onions.
