Julie's Breakfast Casserole

List of Ingredients
- 2 Tbsp butter, melted
- 1 pkg. (1-1/2 lbs.) frozen hash browns*
- 2 lbs. spicy sausage
- 2 cups chopped onions
- 2 cups sliced mushrooms
- 2 cups shredded sharp Cheddar cheese
- 10 eggs
- 2 cups milk
- 1/4 cup Dijon mustard
- 1 tsp nutmeg
- Salt, pepper
Instructions
- Cover the bottom of a 10x13-inch baking dish with the butter. Top with the potatoes.
- Cook the sausage, onions and mushrooms until the sausage loses its redness; spread over the hash browns.
- Mix the remaining ingredients in a blender and pour over the other stuff. Bake in a 350-degree oven for one hour, or until the egg is set.
Serves 12 to 16
* If you can find them, buy the O'Brien hash browns with peppers and onions.
