    Cat's Cheese Omelet with Fresh Salsa *

    List of Ingredients


    • Salsa:
    • 1/2 to 1 whole tomato, chopped
    • 1/4 cup chopped onion
    • Finely chopped fresh jalapeño, to taste
    • Squeeze of fresh lime juice
    • Salt and black pepper to taste
    • .
    • Omelet:
    • 2 large (or 3 medium) eggs
    • 1 Tbsp milk
    • Salt, black pepper and cayenne (optional) to taste
    • 1/2 Tbsp butter
    • 1/4 cup shredded Cheddar cheese
    • 2 to 3 Tbsp chopped fresh cilantro


    Instructions


    1. In a small bowl, stir together the chopped tomato, onion and jalapeño. Squeeze lime juice over. Season to taste with salt and pepper. Stir to combine well; set aside.

    2. In a bowl, whisk together the eggs, milk, salt, pepper (and cayenne, if using), to blend.

    3. In an 8-inch (preferably cast-iron) skillet, heat butter over moderately high heat until foam subsides. Pour the egg mixture in evenly over the bottom and cook it for 1 minute, or until it is almost set. Lift edges with spatula, so the uncooked egg can run underneath. Sprinkle half of the omelet with the shredded cheese and cilantro, and cook for another minute or until it is set. Fold the omelet over, transfer to a plate and serve immediately with the salsa.
