    Cheddar Egg Scramble

    From "The Ultimate Southern Living Cookbook"

    List of Ingredients


    • 1/4 cup chopped onion
    • 1/4 cup chopped green pepper
    • 1 Tbsp butter, melted
    • 4 large eggs, beaten
    • 2 Tbsp milk
    • 1/8 tsp seasoned salt
    • 4 slices bacon, cooked and crumbled
    • 1/4 cup (1 ounce) shredded Cheddar cheese


    Instructions


    1. Saute onion and green pepper in butter in a large skillet until tender. Combine eggs and next three ingredients; mix well. Pour egg mixture into hot skillet.

    2. Cook, without stirring, until egg mixture begins to set on bottom. Draw a spatula across bottom of pan to form large curds. Continue cooking until eggs are thickened, but still moist (do not stir constantly).

    3. Remove from heat. Sprinkle with cheese; cover and let stand 1 minute.

      Makes 2 servings.
