    Chocolate Chip Pancakes, Michael's

    List of Ingredients


    • 1½ cups all-purpose flour
    • 1 Tbsp sugar
    • 1½ tsp baking powder
    • ¾ tsp salt
    • ¼ tsp baking soda
    • 1¼ cups milk
    • ¼ cup vegetable oil
    • 2 large eggs, separated
    • 1 cup miniature chocolate morsels
    • Nutty Butter Sauce (recipe follows)


    Instructions


    1. In a large bowl, combine flour, sugar, baking powder, salt and baking soda. Stir in milk, oil and egg yolks, just until combined.

    2. In a medium bowl, beat egg whites at high speed with an electric mixer until stiff peaks form. Fold egg whites into flour mixture. Gently stir in chocolate morsels.

    3. Spoon batter in batches, by 1/3-cupfuls, onto a nonstick skillet or griddle. Cook over medium heat for 1 minute, or until edges of pancakes look dry and bubbles begin to form in center of pancakes. Turn pancakes, and cook for about 1 minute. Serve immediately with Nutty Butter Sauce.

      Makes about 10 pancakes.

      NUTTY BUTTER SAUCE

      • 1 cup butter
      • 1 cup chopped pecans
      • 1/3 cup dark corn syrup

      In a medium bowl, combine butter, pecans and corn syrup. Microwave on High in 30-second intervals, stirring between each, until butter is melted. Serve warm.

      Makes about 2 cups.
