Chocolate Chip Pancakes, Michael's

List of Ingredients
- 1½ cups all-purpose flour
- 1 Tbsp sugar
- 1½ tsp baking powder
- ¾ tsp salt
- ¼ tsp baking soda
- 1¼ cups milk
- ¼ cup vegetable oil
- 2 large eggs, separated
- 1 cup miniature chocolate morsels
- Nutty Butter Sauce (recipe follows)
Instructions
- In a large bowl, combine flour, sugar, baking powder, salt and baking soda. Stir in milk, oil and egg yolks, just until combined.
- In a medium bowl, beat egg whites at high speed with an electric mixer until stiff peaks form. Fold egg whites into flour mixture. Gently stir in chocolate morsels.
- Spoon batter in batches, by 1/3-cupfuls, onto a nonstick skillet or griddle. Cook over medium heat for 1 minute, or until edges of pancakes look dry and bubbles begin to form in center of pancakes. Turn pancakes, and cook for about 1 minute. Serve immediately with Nutty Butter Sauce.
Makes about 10 pancakes.

NUTTY BUTTER SAUCE
• 1 cup butter
• 1 cup chopped pecans
• 1/3 cup dark corn syrup
In a medium bowl, combine butter, pecans and corn syrup. Microwave on High in 30-second intervals, stirring between each, until butter is melted. Serve warm.
Makes about 2 cups.
