    Chocolate Chip Zucchini Banana Bread

    Source of Recipe

From "Our Sweet Basil Kitchen" by Cade and Carrian Cheney

    Recipe Introduction

"Chocolate plus vegetables plus banana bread? Sounds like a crazy mashup of flavors, but trust us—it's amazing. In fact, it might be the most delicious and moist banana bread we've ever had."

    List of Ingredients

    â—¦  1 ½ cups all-purpose flour
    â—¦  1 teaspoon baking soda
    â—¦  ½ teaspoon baking powder
    â—¦  1 ¼ teaspoons cream of tartar
    â—¦  ½ teaspoon salt
    â—¦  ½ cup canola oil
    â—¦  â…” cup granulated sugar
â—¦  1 large egg, slightly beaten
â—¦  1 cup finely grated zucchini (about 1 medium zucchini)
â—¦  1 cup mashed banana (about 2 large bananas)
    â—¦  1 ½ cups chocolate chips

    Recipe

Preheat oven to 350 degrees F and grease an 8 ½ x 4-inch loaf pan.

In a medium bowl, whisk together the flour, baking soda, baking powder, cream of tartar, and salt. Set aside.

In the bowl of an electric stand mixer, beat together the canola oil and sugar. Add the egg and mix again. Dump in the zucchini and mix on medium speed until everything is evenly combined.

Starting and ending with the flour mixture, alternate adding the flour and mashed banana a little at a time while the mixer runs on low. Fold in the chocolate chips and pour batter into prepared loaf pan.

Bake 50 to 55 minutes, tenting with foil the last 15 minutes to avoid too much browning. Allow bread to cool before slicing, then serve warmed up with a little butter.

    Makes 1 loaf
