Classic Waffles

Recipe Introduction
The keys to achieving crispy waffles are a really hot waffle iron (sprinkle with a drop of water and wait for a sizzle) and patience (don't rush the cooking, and no peeking!). Freeze leftovers in a lock-top plastic bag, then rewarm in a toaster.
List of Ingredients
◦  1½ cups all-purpose flour
◦  3 tablespoons sugar
◦  1 tablespoon baking powder
◦  ¼ teaspoon salt
◦  2 large eggs
◦  1½ cups whole milk
◦  ¼ cup unsalted butter, melted and cooled
◦  1 teaspoon pure vanilla extract
◦  Nonstick cooking spray
Recipe
Preheat a waffle maker according to the manufacturer's directions.
In a large bowl, stir together the flour, sugar, baking powder, and salt. In a medium bowl, whisk together the eggs, milk, melted butter, and vanilla. Add the egg mixture to the flour mixture and stir until there are no lumps remaining.
Coat the inside of the waffle maker on both sides with nonstick cooking spray. Ladle about ¾ cup batter onto the waffle maker, close the lid, and cook until the waffles are browned and cooked through, 3 to 4 minutes. Using a fork, transfer thee waffles to a plate and keep warm while you cook the remaining batter. Serve hot.
