Cream Cheese Scrambled Eggs

Recipe Introduction
"These creamy curds need no adornment other than seasoning. Take care not to stir them too much while they cook. Simply draw a heat-resistant spatula through egg mixture as it begins to set on the bottom, forming large curds. Continue until eggs are thickened but still moist; do not stir constantly or they'll become dry and crumbly."

â—¦ 8 large eggs
â—¦ ¼ cup milk
â—¦ ½ teaspoon salt
â—¦ ½ teaspoon pepper
â—¦ 1 tablespoon butter
â—¦ 1 (3-ounce) package cream cheese, cut into cubes
â—¦ â…“ cup chopped fresh basil (optional)
Recipe
Whisk together the first 4 ingredients.
Melt butter in a large nonstick skillet over medium heat; add egg mixture, and cook, without stirring, until eggs begin to set on bottom. Sprinkle cream cheese cubes evenly over egg mixture; draw a spatula across bottom of skillet to form large curds.
Cook until eggs are thickened but still moist. (Do not stir constantly.) Remove from heat. Stir in chopped basil before serving, if desired.
