    Crunchy Honey, Cinnamon, and Almond Granola

    "Good morning, honey! Honey cinnamon almond granola, that is. This granola recipe will make you excited to wake up on a cold winter morning and is an energizing power breakfast to kick-start your day. The kids will love it, too! Liam and Lillya have been requesting granola parfaits with an extra drizzle of honey on top for breakfast lately. It makes my heart full when they're excited about healthy morning recipes like this one!"

    List of Ingredients

    ◦ 3 cups old-fashioned oats
    ◦ 1 cups unsweetened large flake coconut
    ◦ 1 cup almond flour
    ◦ 1 cup slivered almonds
    ◦ cup packed dark brown sugar
    ◦ 1 tablespoon cinnamon
    ◦ teaspoon sea salt
    ◦ cup liquid coconut oil
    ◦ cup pure liquid honey
    ◦ 2 tablespoons pure maple syrup
    ◦ 1 teaspoons pure vanilla extract

    For serving (optional):
    ◦ Plain full-fat Greek yogurt
    ◦ Honey
    ◦ Ruby red grapefruit, halved and brled (see Tip)

    Recipe

    Preheat the oven to 325 F.

    In a large bowl, combine the oats, coconut, almond flour, almonds, brown sugar, cinnamon, and salt. In a medium bowl, whisk together the coconut oil, honey, maple syrup, and vanilla. Pour over the dry ingredients and stir to combine.

    Divide the granola evenly between two baking sheets, arranging it in a single layer. Bake for 20 to 25 minutes, stirring once halfway, until the granola is golden brown. Let cool to room temperature before breaking the granola into smaller clusters.

    To serve, scoop cup yogurt into a bowl and top it with ⅔ cup granola and a drizzle of honey.

    Serve alongside a brled grapefruit half.

    Makes 6 cups




    ❧ Tip: To brle a grapefruit half, sprinkle the cut side with about 1 teaspoons granulated sugar. Heat the sugar using a kitchen torch until lightly caramelized. If you don't have a kitchen torch, place the grapefruit half on a baking sheet and pop it under the broiler for a few minutes.

    ❧ The granola can be stored in an airtight container at room temperature for up to two weeks or in the freezer for up to three months.
