    Crustless Canadian Bacon-and-Brie Quiche

    Recipe Introduction

    "Canadian bacon forms a surprise crust in this updated brunch dish."

    List of Ingredients

    â—¦ 14 thin Canadian bacon slices (about 10 ounces)
    â—¦ 1 (8-ounce) round Brie cheese
    â—¦ 8 large eggs, lightly beaten
    â—¦ ½ cup mayonnaise
    â—¦ ½ teaspoon ground white pepper
    â—¦ ¼ cup grated Parmesan cheese
    â—¦ ½ teaspoon dried basil

    Recipe

    Arrange bacon slices on bottom and up sides of a lightly greased 9-inch pie plate, slightly overlapping slices.

    Remove rind from Brie, and cut Brie into cubes. Whisk together eggs and mayonnaise; stir in Brie, pepper, Parmesan cheese and basil. Pour filling into prepared pie plate.

    Bake at 375° F for 30 minutes or until a knife inserted in center comes out clean. Let stand 5 minutes before serving.

    Makes 6 servings
