Dad's Cheesy Eggs

Recipe Introduction
"My mom and dad have been married since they were eighteen and twenty-one, respectively. My dad played college hockey, and the games were often late at night. When they returned home in the early morning hours, he would make my mom these cheesy eggs with a side of toast. My mom would have that eye-rolling reaction of delight that's become one of the reasons I love to cook. This recipe is quite simply eggs and cheese, but sometimes it's the most basic things that are the most perfectthat's definitely the case with these eggs."
List of Ingredients
◦ 4 warm medium-boiled eggs
◦ cup finely shredded cheddar cheese
◦ Kosher salt and freshly ground pepper
◦ Buttered toast, for serving
◦ 1 tablespoon chopped fresh chives and/or basil, for serving
◦ Crushed red pepper flakes, for serving
Recipe
In a medium bowl, gently mash together the warm eggs and cheese with a fork. Season to taste with salt and pepper.
Spread the mixture onto the buttered toast and top with chives and a pinch of red pepper flakes.
Serves 2
❧ Note:
Make sure your eggs are warm when you mix them with the cheese. Their heat is what melts the cheese, which is key. If the cheese is not melting, stick the toast under the broiler for a few seconds to get everything warm and delicious.
