    Egg In a Biscuit

    "If you're in the mood for something fun for brunch but you don't want to go to the trouble of making biscuits from scratch, may we suggest giving these cheerful, eggy biscuits a try? Made by simply cutting holes out of canned biscuits, tucking in a slice of par-cooked bacon, then adding eggs, they bake into a tasty main course for breakfast or brunch. And don't toss those cutouts—spread them with butter and jam for the perfect sweet bite. Served with a simple green salad on the side, they're a whole breakfast all-in-one."

    List of Ingredients

    â—¦ 8 bacon slices
    â—¦ 1 16.3-ounce can refrigerated buttermilk biscuits (8 biscuits)
    â—¦ 2 ounces sharp cheddar cheese
    â—¦ 8 large eggs
    â—¦ ¼ teaspoon kosher salt
    â—¦ ¼ teaspoon black pepper
    â—¦ Chopped fresh chives

    Recipe

    Preheat oven to 400° F. Line a large rimmed baking sheet with parchment paper.

    Working in two batches, cook bacon in a large skillet over medium-low until partially cooked but not crisp, 10 to 15 minutes. Set bacon aside.

    Pat each biscuit into a 3 ½-inch-wide round. Using a 2-inch round cutter, cut a circle from center of each biscuit. Place biscuit rings and centers on prepared baking sheet. Bake in preheated oven until puffed but still pale, about 8 minutes. Do not turn oven off.

    Cut bacon slices in half crosswise. Drape two bacon pieces over holes in biscuit rings; sprinkle each with 1 tablespoon cheese. Press bacon and cheese into biscuit holes to create wells. Separate eggs, placing egg whites in a medium bowl and one egg yolk in each biscuit well. Whisk egg whites just until frothy. Spoon about 1 tablespoon egg white over each yolk. Sprinkle filled biscuit rings evenly with salt and pepper.

    Bake biscuit rings and centers until biscuits are golden brown and eggs are just set, 10 to 12 minutes. Garnish with chives.

    Makes 8 servings
