    Egg and Sausage Strata

    "When I have guests for brunch, I'd rather spend more time with them than in the kitchen. A make-it-the-night-before breakfast casserole is the perfect solution. With French bread, eggs, six kinds of cheese, sausage, and bell peppers, this strata is a complete meal. What's not to love?"

    List of Ingredients

    ◦ Vegetable oil spray
    ◦ 1 loaf day-old French bread, cut into 1-inch cubes
    ◦ 1 pound sage pork sausage, casings removed, crumbled
    ◦ cup chopped green bell pepper
    ◦ cup chopped red bell pepper
    ◦ ⅓ cup chopped onion
    ◦ 6 large eggs
    ◦ 3 cups milk
    ◦ 1 teaspoon dry mustard
    ◦ teaspoon kosher salt
    ◦ teaspoon freshly ground black pepper
    ◦ teaspoon dried oregano
    ◦ 1 1-ounce package shredded Italian cheese blend

    Recipe

    Spray a 9-by-13-inch baking dish with the vegetable oil spray. Spread the bread cubes evenly over the bottom of the dish.

    Cook the sausage in a large nonstick skillet, stirring occasionally, until no longer pink, about 5 minutes. Add the green peppers, red peppers, and onion and cook about 5 minutes. Drain the fat from the sausage mixture and then evenly spread the sausage mixture over the bread cubes.

    Beat the eggs, milk, mustard, salt, pepper, and oregano in a large bowl. Pour the egg mixture evenly over the sausage mixture. Sprinkle the cheese evenly over the surface of the eggs. Cover the baking dish with aluminum foil and refrigerate overnight.

    Preheat the oven to 325 F.

    Remove the baking dish from the refrigerator while the oven is preheating. Bake, covered, for 1 hour and 15 minutes. Remove the foil and bake for 10 minutes more, or until a knife inserted into the center of the strata comes out clean. Let the strata stand for 10 minutes before serving.

    cooked spinach
    crumbled feta
    chopped smoked salmon
    diced tomatoes
    diced prosciutto
