    List of Ingredients


    • 1 (6- to 8-ounce) pkg. frozen shredded hasbrowns, thawed
    • 1/2 cup butter
    • 2 cups shredded Cheddar cheese
    • 1/2 lb. Italian sausage, cooked
    • 2 cups mushrooms, diced
    • 1 cup chopped yellow bell pepper
    • 1 cup chopped red bell pepper
    • 5 eggs
    • 1/2 cup milk
    • Seasonings to taste
    • .
    • Sliced tomatoes, sliced avocado, and salsa


    Instructions


    1. Press thawed hashbrowns between paper towels to remove moisture.

    2. Spray a quiche pan with cooking spray; press hashbrowns into pan, forming a crust. Brush with butter and bake at 450 degrees for 30 minutes. Remove from oven.

    3. Sprinkle prepared crust with Cheddar cheese. Add sausage, peppers, and mushrooms. Beat the eggs and milk together, add seasonings to taste, and pour egg mixture over baking dish.

    4. Bake, uncovered, at 350 degrees for 30 to 40 minutes.

      Slice and serve with sliced tomatoes, avocado, and salsa on the side.
