- 1 (6- to 8-ounce) pkg. frozen shredded hasbrowns, thawed
- 1/2 cup butter
- 2 cups shredded Cheddar cheese
- 1/2 lb. Italian sausage, cooked
- 2 cups mushrooms, diced
- 1 cup chopped yellow bell pepper
- 1 cup chopped red bell pepper
- 5 eggs
- 1/2 cup milk
- Seasonings to taste

- Sliced tomatoes, sliced avocado, and salsa
Instructions
- Press thawed hashbrowns between paper towels to remove moisture.
- Spray a quiche pan with cooking spray; press hashbrowns into pan, forming a crust. Brush with butter and bake at 450 degrees for 30 minutes. Remove from oven.
- Sprinkle prepared crust with Cheddar cheese. Add sausage, peppers, and mushrooms. Beat the eggs and milk together, add seasonings to taste, and pour egg mixture over baking dish.
- Bake, uncovered, at 350 degrees for 30 to 40 minutes.
Slice and serve with sliced tomatoes, avocado, and salsa on the side.
