Eggs in Bacon Rings

- 2 slices bacon
- 2 eggs
- Salt and freshly ground pepper to taste
- Parsley or chives, for garnish
Instructions
- Cook the bacon until it is almost crisp. Drain on paper towels.
- Spray a muffin pan and line the sides with the bacon. Add the eggs and season with salt and pepper.
- Bake in a preheated 350-degree (F) oven for 8 to 10 minutes, or until the eggs are done to your preference. Garnish and serve immediately.
