    Eggs in Bacon Rings

    List of Ingredients


    • -- Per Person --
    • 2 slices bacon
    • 2 eggs
    • Salt and freshly ground pepper to taste
    • Parsley or chives, for garnish


    Instructions


    1. Cook the bacon until it is almost crisp. Drain on paper towels.

    2. Spray a muffin pan and line the sides with the bacon. Add the eggs and season with salt and pepper.

    3. Bake in a preheated 350-degree (F) oven for 8 to 10 minutes, or until the eggs are done to your preference. Garnish and serve immediately.
