    French Omelet & Bacon Breakfast

    List of Ingredients


    • 4 slices bacon
    • 2 Tbsp chopped onion
    • 1 Tbsp chopped green pepper
    • 1 Tbsp butter
    • 2 eggs
    • 1 Tbsp milk
    • 1/2 cup Cheddar cheese


    Instructions


    1. Preheat griddle (or large skillet) on medium heat.

    2. Place 2 bacon slices along each long edge of griddle. Cook bacon 5 to 6 minutes, or until brown and crisp. Turn after half the time.

    3. While bacon cooks, saute onion and green pepper in butter until tender-crisp. Remove vegetables from griddle. Set aside.

    4. In small bowl, beat eggs and milk together. Slowly pour egg mixture down center of griddle. Spread egg mixture quickly to form a rectangle. Cook eggs for 1 to 2 minutes, or until almost set. Sprinkle onion, green pepper, and cheese over top of eggs. With pancake turner, gently roll up omelet. Remove from griddle. Cut in half.

      Serve omelet with bacon.

      Serves 2
