Overnight Baked Blueberry French Toast

- 1 (8-ounce) pkg. light cream cheese, softened
- 1/3 cup maple syrup
- 1/2 cup sour cream
- 1/2 cup plain yogurt
- 2/3 cup milk
- 8 eggs
- 1/2 tsp ground cinnamon
- 3/4 tsp ground nutmeg
- 1 tsp vanilla extract
- 8 sandwich-size slices French bread, divided
- 1-1/2 cups frozen blueberries, divided

- Maple syrup
Instructions
- In food processor, combine the cream cheese, maple syrup, sour cream, yogurt and milk, and process until smooth. Add eggs, cinnamon, nutmeg and vanilla, and process until mixture is smooth.
- Spray a 9x13-inch baking pan with nonstick spray. Lay 4 slices of the bread in the pan. Sprinkle with half of the blueberries. Pour on half of the cream-cheese mixture, spreading it evenly over bread/berry layers. Layer on the remaining bread slices, sprinkle with the remaining blueberries and pour on the remaining cream-cheese mixture. Cover tightly and refrigerate overnight.
- The next morning, remove baking dish from refrigerator 30 minutes before baking. To bake, cover baking pan with aluminum foil and bake at 350 degrees (F) for 30 minutes.
Serve with maple syrup.
