Overnight French Toast with Maple Syrup & Orange Zest

- 10 cups hearty, day-old white bread (or French bread) cubes
- 1 (8-ounce) pkg. 1/3-less-fat cream cheese, softened
- 8 eggs
- 1-1/2 cups 2 percent milk
- 2/3 cup half-and-half
- 1/2 cup good-quality maple syrup
- 1/2 tsp vanilla
- Grated orange zest, to taste
- Powdered sugar
- Maple or good-quality berry syrup
Instructions
- Turn bread cubes into a 9x13-inch baking pan coated with nonstick spray. In mixing bowl, beat cream cheese until smooth; add eggs, one at a time, beating well after each addition. Stir in half-and-half, maple syrup, vanilla and orange zest. Pour egg mixture over bread, cover and refrigerate overnight.
- The next morning, remove pan from refrigerator and let stand 30 minutes, then bake at 375 degrees (F) about 50 minutes, or until firm.
Dust with powdered sugar and serve with maple syrup or any good berry syrup.
Makes one 9x13-inch pan.
