Syrup: Fruit-Flavored Syrup

- 2 cups chopped ripe fruit (pears, pineapple, peaches, plums, or apricots) or 2 cups berries (raspberries, blueberries, or strawberries)
- 1 cup pure maple syrup
- 1 tsp peeled and finely grated ginger root (optional)
Instructions
- In a food processor, process fruit, syrup and ginger until mixture is puréed. Pour mixture into a small saucepan and simmer over low heat for 5 minutes.
- Using a fine-mesh sieve or a double layer of cheesecloth in a strainer, strain syrup, pressing fruit with back of a spoon to extract as much liquid as possible. Serve immediately, or refrigerate and reheat before serving.
Makes about 1-1/2 cups.
