    Good Grits Casserole

    List of Ingredients


    • 4 cups water
    • 1/2 tsp Cajun seasoning
    • 1-1/4 cups quick-cooking grits
    • 1 cup grated sharp Cheddar cheese, divided
    • 4 slices American cheese
    • 4 Tbsp butter
    • 5 large eggs, beaten
    • 1 cup milk
    • 1 pound ground sausage, cooked and drained


    Instructions


    1. Preheat the oven to 350°F. Grease a 13- x 9-inch casserole dish.

    2. In a large pot, bring the water and Cajun seasoning to a boil. Add the grits slowly, stirring until there are no lumps. Reduce the heat and allow the grits to cook for 5 minutes. Remove the grits from the heat. Stir in 3/4 cup of the Cheddar cheese, the American cheese slices, and the butter and allow these ingredients to melt. Stir in the beaten eggs and milk and pour the mixture into the prepared baking dish. Top the grits and eggs mixture with the sausage and the remaining 1/4 cup Cheddar cheese.

    3. Bake the casserole for 1 hour. Allow the dish to cool for 5 to 10 minutes before serving warm.

      Makes 6 to 8 servings.
