    Ham and Cheese Waffles

    "These sweet-meets-savory waffles are undeniably appealing, boasting salty bites of deli ham and rich swirls of cheese tucked into a crisp, buttery crust. To infuse these simple waffles with enough deep flavor to reinforce the cheese's bright tang, we boosted a buttermilk batter with a touch of dry mustard. Equal amounts of finely chopped deli ham and shredded cheddar folded into the batter promised salty, savory goodness in every nook and cranny, and baking powder and plenty of butter ensured a crisp, rich, browned exterior. Served piping hot topped off with a runny fried egg or a drizzle of maple syrup, these indulgent waffles were perfect brunch fare. The number of waffles this recipe yields will depend on the size and style of your waffle maker. Our favorite waffle maker is the Cuisinart Double Belgian Waffle Maker."

    â—¦ 2 cups (10 ounces) all-purpose flour
    â—¦ 1 tablespoon sugar
    â—¦ 1 teaspoon baking powder
    â—¦ 1 teaspoon salt
    â—¦ â…› teaspoon dry mustard
    â—¦ 1 ¾ cups buttermilk
    â—¦ 4 tablespoons unsalted butter, melted and cooled
    â—¦ 1 large egg
    â—¦ 3 ounces sliced deli ham, chopped fine
    â—¦ 3 ounces cheddar, Gruyère, or fontina cheese, shredded (¾ cup)

    Recipe

    Adjust oven rack to middle position and heat oven to 200 degrees. Set wire rack in rimmed baking sheet and place in oven.

    Whisk flour, sugar, baking powder, salt, and mustard together in large bowl. In separate bowl, whisk buttermilk, melted butter, and egg together. Make a well in center of flour mixture, pour buttermilk mixture into well, and gently whisk together until just incorporated with few lumps remaining (do not overmix). Gently fold in ham and cheddar with rubber spatula.

    Meanwhile, heat waffle iron according to manufacturer's instructions and spray with vegetable oil spray. Add â…” cup batter to waffle iron and cook according to manufacturer's instructions until golden brown, about 3 ½ minutes. Transfer to wire rack in oven. Repeat with remaining batter. Serve.

    Makes four 7-inch waffles
