Recipe Introduction
A healthy stack of home fries does as much to enhance a plate of morning eggs as the routine addition of bacon slices or sausage links. Put the trio together — eggs, meat, potatoes — and you create a breakfast offering that's sure to satisfy.
List of Ingredients
◦  Salt and freshly ground pepper
◦  3 large Yukon gold potatoes, scrubbed
◦  2 tablespoons unsalted butter
◦  1 tablespoon olive oil
◦  1 yellow onion, diced
◦  1 small red bell pepper, seeded and diced
◦  4 green onions, chopped
Recipe
Bring a large pot of salted water to a boil over high heat.
Add the potatoes and cook until tender when pierced with a small knife, about 35 minutes. Drain the potatoes and let cool, then refrigerate until cold, at least 2 hours or up to 1 day. Peel the potatoes and cut into ½-inch cubes.
In a large nonstick frying pan, melt the butter with the olive oil over medium-high heat. Add the potatoes, yellow onion, and bell pepper and toss to coat. Cook, stirring occasionally, until just browned, about 15 minutes. Sprinkle with 1 teaspoon salt and ½ teaspoon pepper and cook until golden brown, about 5 minutes longer. Transfer the fries to a serving bowl, sprinkle with the green onions, and serve.
