Recipe Introduction
"Blueberries and maple syrup combine with steel-cut oats and creamy coconut milk for a sweet, rib-sticking bowl of oatmeal that's much tastier than the slop they served to Andy, Red, and the rest of the boys in Shawshank State Prison. Wild blueberries are sweeter and more flavorful than their cultivated cousins. That said, using what you have on hand is one of the first rules in my kitchen."
List of Ingredients
â—¦ One 13.5-ounce can unsweetened lowfat coconut milk
â—¦ 1 cup water
â—¦ 2 tablespoons maple syrup, plus more for serving
â—¦ ¼ teaspoon kosher salt
â—¦ 1 cup quick-cooking steel-cut oats
â—¦ ½ teaspoon vanilla extract
â—¦ 1 cup fresh or frozen wild blueberries, plus more for serving
â—¦ Toasted coconut flakes for serving
Recipe
In a medium saucepan over medium-high heat, combine the coconut milk, water, maple syrup, and salt and bring to a low boil. Slowly pour in the oats and, stirring continuously, bring back to a boil. Turn the heat to medium-low and simmer, stirring occasionally, until the oats are cooked, 5 to 7 minutes.
Remove the pan from the heat, stir in the vanilla and blueberries, cover, and let sit for 5 minutes.
Serve the oatmeal immediately, passing more maple syrup, fresh blueberries, and coconut flakes at the table.
