    Recipe Introduction

    "Lou Sedacek was Jennifer's grandfather, a near-mythical man from Czechoslovakia who fought in the First World War. According to family lore, Lou made these eggs during the war in a heavy cast iron pan he carried into the field. Everyone in Jennifer's family claims to make the authentic version. Don't worry about having stale bread, what's important is that the bread is dry enough to absorb more of the bacon fat and eggs. Great bacon makes all the difference."

    List of Ingredients

    ◦ 8 slices bacon, diced
    ◦ 8 slices stale white bread, cubed
    ◦ 4 eggs, beaten
    ◦ Freshly ground black pepper
    ◦ Salt

    Recipe

    Brown the bacon in a skillet over medium heat and pour off fat.

    Add the cubed bread and brown, stirring frequently, about 3 minutes. Pour the eggs over the bread and cook, stirring constantly, until the eggs begin to firm.

    Add pepper and a pinch of salt.
    Serve it up from the pan.
