Make-Ahead Brunch Casserole

List of Ingredients
- 1 Tbsp butter
- 2 onions, chopped
- 2 cups sliced mushrooms
- 4 cups frozen hash browns, thawed
- Salt and pepper to taste
- ¼ tsp garlic salt
- 1 pound bacon, crisply cooked and crumbled
- 4 eggs
- 1½ cups milk
- 1/8 tsp dried parsley
- 1 cups shredded Cheddar cheese
Instructions
- In a medium skillet, melt butter and sauté onions and mushrooms until tender. Place hash browns in the bottom of a greased 13- x 9-inch baking dish. Sprinkle with salt, pepper, and garlic salt. Top with bacon, onions, and mushrooms.
- In a medium mixing bowl, beat eggs with milk and parsley, pour over casserole, and top with cheese. Cover and refrigerate overnight.
- Bake, uncovered, at 400° F for 1 hour, or until set.
Makes 4 to 6 servings.
