    Make-Ahead Brunch Casserole

    From "Gooseberry Patch Classics: Casseroles"

    List of Ingredients


    • 1 Tbsp butter
    • 2 onions, chopped
    • 2 cups sliced mushrooms
    • 4 cups frozen hash browns, thawed
    • Salt and pepper to taste
    • ¼ tsp garlic salt
    • 1 pound bacon, crisply cooked and crumbled
    • 4 eggs
    • 1½ cups milk
    • 1/8 tsp dried parsley
    • 1 cups shredded Cheddar cheese


    Instructions


    1. In a medium skillet, melt butter and sauté onions and mushrooms until tender. Place hash browns in the bottom of a greased 13- x 9-inch baking dish. Sprinkle with salt, pepper, and garlic salt. Top with bacon, onions, and mushrooms.

    2. In a medium mixing bowl, beat eggs with milk and parsley, pour over casserole, and top with cheese. Cover and refrigerate overnight.

    3. Bake, uncovered, at 400° F for 1 hour, or until set.

      Makes 4 to 6 servings.
