Recipe Introduction
"Lidey Heuck works with me and she was reminiscing about the delicious vanilla cream of wheat they would serve on Wednesday mornings at Bowdoin College, where she went to school. This is my version and trust me, it's worth getting out of bed for on a cold winter morning!"
List of Ingredients
◦ 4 cups (1 quart) whole milk
◦ 2 cups (1 pint) half-and-half
◦ 2 cups water
◦ 3 tablespoons light brown sugar
◦ 2 tablespoons pure maple syrup
◦ 2 teaspoons kosher salt
◦ 1 cups cream of wheat cereal (not instant)
◦ 1 teaspoon pure vanilla extract
◦ Butter, maple syrup, and milk, for serving
Recipe
Combine the milk, half-and-half, water, brown sugar, maple syrup, and salt in a very large saucepan and bring to a boil.
Lower the heat and very slowly sprinkle on the cream of wheat, whisking constantly, until it's all incorporated. Simmer for 3 minutes, stirring constantly with a wooden spoon, until it's thickened. Stir in the vanilla and serve hot in bowls with a pat of butter, a drizzle of maple syrup, and cold milk.
Serves 8 to 10
❧ Make It Ahead:
Combine the ingredients from the milk to the salt in a pot and refrigerate. When ready to serve, bring to a boil, whisk in the cereal, and finish the recipe.
