Mike's Classic Bacon Fat Home Fries

"Guests at Mike's City Diner wolf down hundreds of pounds of home fries each and every week. And they often wonder what the secret is. Well, it's very simple. We cook our home fries in bacon fat! Maybe not the healthiest secret, but certainly delicious."
List of Ingredients
Seasoning Salt:
◦  1 Tbsp kosher salt
◦  1 Tbsp white pepper
◦  1 Tbsp onion powder
◦  1 Tbsp garlic powder
◦  1 Tbsp Spanish paprika
Home Fries:
◦  4 Yukon gold potatoes, with skin
◦  1 medium yellow onion, diced
◦  2 Tbsp bacon fat, divided
◦  2 Tbsp olive oil, divided
◦  1 Tbsp seasoning salt
Recipe
To make the seasoning salt, mix together all the ingredients and store in an airtight container until ready to use.
To make the home fries, boil the potatoes whole until cooked through, about 15 minutes. Let them cool. Then chop the potatoes into ½-inch chunks.
Sauté the onion in half the bacon fat and half the olive oil over medium-high heat until translucent, about 5 minutes. Add the potatoes, seasoning salt and the remaining bacon fat and olive oil. Heat until lightly browned on one side, about 5 minutes. Then flip the potatoes and continue to cook on the other side until browned and crispy, about 10 minutes.
