    Mile-High Buttermilk Biscuits

    From "Sunday Dinner at Grandma's" (Gooseberry Patch)

    List of Ingredients


    • 2 cups all-purpose flour
    • 1 Tbsp baking powder
    • 1 tsp salt
    • ½ cup lard or shortening, chilled in freezer
    • 2/3 to ¾ cup buttermilk
    • ¼ cup butter, melted


    Instructions


    1. Mix together flour, baking powder, and salt. Cut in lard or shortening until a crumbly texture is reached. Stir in buttermilk until incorporated and dough leaves sides of bowl. Dough will be sticky. Knead dough 3 to 4 times on a lightly floured surface. Roll out to ½-inch thickness, about 2 to 4 passes with a rolling pin.

    2. Cut dough with a biscuit cutter, pressing straight down with cutter. Place biscuits on a parchment paper-lined baking sheet.

    3. Bake at 500° F for 8 to 10 minutes. Brush tops of warm biscuits with melted butter.

      Makes about 1 dozen.

      SAWMILL SAUSAGE GRAVY

      • 1 pound ground pork sausage, formed into patties
      • 2 Tbsp all-purpose flour
      • 1½ cups milk
      • Salt and pepper to taste

      In a skillet over medium heat, brown sausage patties. Remove patties to drain on paper towels, reserving drippings in skillet. Add flour to reserved drippings and stir until browned.

      Slowly whisk in milk; cook and stir until smooth and thickened. Thin with hot water, if needed. Crumble sausage patties into gravy; season with salt and pepper.

      Makes 3 cups.



    Final Comments


    • Use a sharp biscuit cutter and don't twist it when cutting out your biscuits... you'll be amazed at how high they rise!

    • For the flakiest biscuits, just stir to moisten and gently roll or pat the dough...don't overmix it.
