    Sausage Gravy

    From "The Big Book of Breakfast"


    List of Ingredients


    • 1 lb. bulk pork sausage (or buy sausage links and remove casing)
    • 3 Tbsp bacon or sausage drippings, if needed
    • 3 Tbsp all-purpose flour
    • 2 cups milk
    • 1/2 tsp salt
    • 1/4 tsp freshly cracked pepper


    Instructions


    1. Place sausage in a large skillet over medium heat and cook, breaking up sausage with a wooden spoon, until meat is no longer pink -- 5 to 6 minutes. Add 1 teaspoon bacon drippings, if needed. Remove sausage with a slotted spoon to a plate, leaving drippings in skillet.

    2. Add bacon drippings, if needed, to total 3 tablespoons. Increase heat to medium-high. Add flour and stir until flour begins to turn brown, about 1 minute. Add milk, salt and pepper, and whisk until thickened, about 2 minutes. Return sausage to skillet and stir until flavors are blended, 1 minute longer.

      Serve over biscuits.

      Serves 4
