Old-Fashioned Buttermilk Flapjacks

Recipe Introduction
"As a kid, I loved two things about Saturday mornings: cartoons and my mom's buttermilk flapjacks. Weekends were the only time of the week that Mom didn't work, so she had time to make flapjacks for us. I can still remember her piling two or three flapjacks on my plate along with some bacon and plenty of maple syrup. I loved to dunk bites of pancakes and pieces of bacon into that saucy sweetness. Just follow my simple steps and you'll end up with the kind of light-as-air flapjacks you thought nobody made anymore."

◦ 1 cups all-purpose flour
◦ 1 teaspoons baking powder
◦ teaspoon baking soda
◦ teaspoon kosher salt
◦ 2 tablespoons sugar
◦ 2 large eggs
◦ 1 cups buttermilk
◦ 2 tablespoons canola oil
◦ 1 teaspoon pure vanilla extract
◦ Unsalted butter
◦ Whipped butter
◦ Maple syrup
Recipe
Sift the flour, baking powder, baking soda, salt, and sugar together into a large bowl. In a medium bowl, whisk together the eggs, buttermilk, canola oil, and vanilla. Pour the egg mixture into the flour mixture and mix just until combined. Don't overmix.
Melt a pat of butter in a heavy skillet or on a griddle over medium heat. For each pancake, pour cup batter in a circle onto the skillet. Cook until bubbles form on the surface and the edges are dry. Flip the pancakes and cook for two minutes more.
Serve with whipped butter and warm maple syrup.
