    Overstuffed French Toast

    Source of Recipe

From "Sunday Dinner at Grandma's" (Gooseberry Patch)

    List of Ingredients

    • One 8-ounce package cream cheese, softened
    • ½ cup butter, softened
    • 1¼ tsp vanilla extract, divided
    • ¾ cup powdered sugar
    • 2 Tbsp brown sugar (packed)
    • 3 eggs, beaten
    • 1 tsp maple syrup
    • Cinnamon, to taste
    • 8 thick slices bread
    • Butter, for frying

    Instructions

    1. With an electric mixer on low speed, beat cream cheese and butter until well blended. Beat in ¼ tsp vanilla and sugars; set aside.

    2. Combine eggs, remaining vanilla, and maple syrup in a shallow bowl. Whisk until well mixed. Sprinkle cinnamon over mixture. Heat a griddle over medium heat. Place bread in egg mixture, one slice at a time, until the first side is moistened; flip and moisten the second side.

    3. Melt a pat of butter on the griddle; add bread slices and cook until golden on both sides. For each serving, place one toast slice on a plate and spoon cream cheese mixture on top. Top with second toast slice and warm Berry Topping.
