Overstuffed French Toast

List of Ingredients
- One 8-ounce package cream cheese, softened
- ½ cup butter, softened
- 1¼ tsp vanilla extract, divided
- ¾ cup powdered sugar
- 2 Tbsp brown sugar (packed)
- 3 eggs, beaten
- 1 tsp maple syrup
- Cinnamon, to taste
- 8 thick slices bread
- Butter, for frying
Instructions
- With an electric mixer on low speed, beat cream cheese and butter until well blended. Beat in ¼ tsp vanilla and sugars; set aside.
- Combine eggs, remaining vanilla, and maple syrup in a shallow bowl. Whisk until well mixed. Sprinkle cinnamon over mixture. Heat a griddle over medium heat. Place bread in egg mixture, one slice at a time, until the first side is moistened; flip and moisten the second side.
- Melt a pat of butter on the griddle; add bread slices and cook until golden on both sides. For each serving, place one toast slice on a plate and spoon cream cheese mixture on top. Top with second toast slice and warm Berry Topping.

BERRY TOPPING
• 10-ounce package frozen berries
• ¼ cup sugar
• 1 Tbsp maple syrup or berry-flavored syrup
In a saucepan over medium-low heat, combine berries, sugar, and syrup. Heat through, stirring until sugar dissolves; keep warm.
