Pend Orielle Caramel French Toast

- 2 Tbsp light corn syrup
- 1 cup brown sugar
- 1/4 cup butter
- 14 slices cinnamon toast
- 6 eggs
- 2 cups milk
- 2 cups light cream
- 1/3 cup sugar
- 2 tsp vanilla
- 1/2 tsp salt

- Sour cream
- 3/4 cup finely chopped pecans
Instructions
- In a saucepan, combine the corn syrup, brown sugar and butter. Melt until smooth and bubbly. Spread in the bottom of a greased 11- x 7-inch glass baking pan. Overlap bread slices like dominoes in pan over syrup.
- In a bowl, mix eggs, milk, light cream, sugar, vanilla and salt. Pour over bread. Cover with foil and bake at 350° for 45 minutes, then remove foil. Bake for 10 to 15 minutes more, or until puffed and golden brown.
- Slice and invert pieces to serve. Garnish with sour cream. Top with small bits of chopped pecans.
Makes 8 servings.
