    Pepper's Garlicky Bacon Scramble

    Recipe Introduction

    "My mom has been making these eggs my entire life because we are never, ever without these ingredients. I *lived* on them when I was pregnant. Luna is basically made of these greasy, garlicky eggs. The recipe varies depending on what's in the fridge or what kind of laziness level my mom is at, but some things always remain the same: bacon, fresh cilantro, garlic, and shallots. They go together like Sonny and Cher and two other people that also go together to make that analogy work. It's been a long time since I've written, okay, give me a f*cking break."

    List of Ingredients

    ◦ 4 eggs
    ◦ 2 tablespoons whole milk
    ◦ 2 thick-cut or 3 regular slices bacon, finely diced
    ◦ 1 small shallot, finely diced, or 3 tablespoons finely diced onion
    ◦ 1 small clove garlic, finely minced
    ◦ 2 tablespoons picked fresh cilantro leaves
    ◦ Kosher salt and freshly ground black pepper
    ◦ Sliced avocado and buttered toast, for serving

    Recipe

    In a small bowl, whisk together the eggs and milk.

    In an 8- or 9-inch nonstick skillet or super well-seasoned cast-iron pan, cook the bacon over medium heat until lightly crisped and the fat has rendered (not as burny-crisp as regular bacon), 5 to 6 minutes. Add the shallot and garlic and cook until softened, about 2 minutes.

    Reduce the heat to low, add the eggs, cilantro, and a good sprinkle of salt and pepper, and cook, pushing the eggs around occasionally, until large curds form and the eggs are no longer wet and shiny, about 2 minutes. Transfer the eggs to a plate and serve with avocado slices and buttered toast.
