    Perfect Fluffy Pancakes

    Recipe Introduction

    "Egg whites are the heroes of these pancakes—whipping them and gently folding them into the batter takes these cakes to new heights. Focus on the words 'folding' and 'gentle'—the less you mess with the batter, the more air will remain inside. More air equals more fluff. You get the picture. To keep pancakes warm, place the cooked pancakes on a baking sheet lined with a kitchen towel. Cover with another kitchen towel and place the sheet in the oven heated to its lowest setting for up to two hours."

    â—¦ 4 cups all-purpose flour
    â—¦ ¼ cup baking powder
    â—¦ 3 large eggs
    â—¦ 1 large egg white
    â—¦ 4 cups whole milk, at room temperature
    â—¦ ¾ cup (1 ½ sticks) unsalted butter, melted
    â—¦ Butter and maple syrup, for serving

    Recipe

    Sift together the flour and baking powder in a large bowl.

    Separate the eggs, putting the yolks in one large bowl and the whites in another. Whisk the milk and melted butter into the egg yolks until smooth. Add the single egg white to the bowl with the others. Using a handheld mixer, beat the egg whites on medium-high speed until they hold soft peaks. Pour the milk mixture into the flour mixture and stir with a rubber spatula until just combined. Add the beaten egg whites and gently fold to combine.

    Heat an 8-inch nonstick skillet over low heat. Pour about 1 ½ cups of the pancake batter into the skillet, smooth the top, then cover with a lid. Cook until golden brown on the bottom and a toothpick inserted into the center comes out clean, about 20 minutes. Transfer the pancake to a plate and repeat with the remaining batter to make five more pancakes. Serve the warm pancakes on individual plates, with butter and maple syrup alongside.

    Makes 6 large pancakes
