    Rocky Bar Hash Browns

    List of Ingredients


    • 6 potatoes
    • 1 medium onion, chopped
    • 1/3 red bell pepper, chopped
    • Olive oil
    • Salt
    • Cajun-style seasoning


    Instructions


    1. Grate the raw potatoes with the large side of the grater or the large grating disk of a food processor. Heat enough olive oil to cover the bottom of a large cast-iron skillet.

    2. Add the potatoes and cook the potatoes over medium heat, stirring to keep them from sticking together. When potatoes are half-cooked, add onion and bell pepper. Season with salt and Cajun seasoning.

    3. Cook, without stirring, until potatoes are brown and crisp on the bottom. Turn and continue cooking until both sides are brown and crisp.

      Serves 6
