Rocky Bar Hash Browns

List of Ingredients
- 6 potatoes
- 1 medium onion, chopped
- 1/3 red bell pepper, chopped
- Olive oil
- Salt
- Cajun-style seasoning
Instructions
- Grate the raw potatoes with the large side of the grater or the large grating disk of a food processor. Heat enough olive oil to cover the bottom of a large cast-iron skillet.
- Add the potatoes and cook the potatoes over medium heat, stirring to keep them from sticking together. When potatoes are half-cooked, add onion and bell pepper. Season with salt and Cajun seasoning.
- Cook, without stirring, until potatoes are brown and crisp on the bottom. Turn and continue cooking until both sides are brown and crisp.
