    Ruth's Pancakes

    List of Ingredients


    • 1 cup whole milk
    • 2 large eggs
    • 3 Tbsp plus 1/2 tsp vegetable oil
    • 1 stick (8 Tbsp) unsalted butter, melted and cooled
    • 1 cup all-purpose flour
    • 4 tsp baking powder
    • 4 tsp sugar
    • 1 tsp salt
    • .
    • Accompaniment: pure maple syrup


    Instructions


    1. Whisk together milk, eggs and 2 tablespoons vegetable oil in a medium bowl, then whisk in butter.

    2. Stir together flour, baking powder, sugar and salt in another bowl. Whisk in egg mixture until just combined.

    3. Heat 1/2 teaspoon oil in a large nonstick skillet over moderate heat until hot but not smoking. Working in batches of three and adding 1/2 teaspoon more oil between batches, pour 1/3-cup measures of batter into skillet and cook until bubbles have formed on top and broken, about 2 minutes. Flip pancakes with a spatula and cook until undersides are golden, about 1 minute more. (Lower heat if pancakes brown too quickly.) Serve with maple syrup.

      Makes about 8 pancakes.
