Ruth's Pancakes

- 1 cup whole milk
- 2 large eggs
- 3 Tbsp plus 1/2 tsp vegetable oil
- 1 stick (8 Tbsp) unsalted butter, melted and cooled
- 1 cup all-purpose flour
- 4 tsp baking powder
- 4 tsp sugar
- 1 tsp salt

- Accompaniment: pure maple syrup
Instructions
- Whisk together milk, eggs and 2 tablespoons vegetable oil in a medium bowl, then whisk in butter.
- Stir together flour, baking powder, sugar and salt in another bowl. Whisk in egg mixture until just combined.
- Heat 1/2 teaspoon oil in a large nonstick skillet over moderate heat until hot but not smoking. Working in batches of three and adding 1/2 teaspoon more oil between batches, pour 1/3-cup measures of batter into skillet and cook until bubbles have formed on top and broken, about 2 minutes. Flip pancakes with a spatula and cook until undersides are golden, about 1 minute more. (Lower heat if pancakes brown too quickly.) Serve with maple syrup.
Makes about 8 pancakes.
