    Salsa Eggs

    From "Southern Living: Homestyle Cooking"

    List of Ingredients


    • 6 large eggs, lightly beaten
    • 1 (4.5-ounce) can chopped green chiles, drained
    • 1 jalapeño pepper, seeded and minced
    • ¼ tsp salt
    • Dash of ground red pepper
    • 2 Tbsp butter
    • ½ cup finely chopped red bell pepper
    • Salsa
    • Sour cream


    Instructions


    1. Stir together first 5 ingredients in a bowl.

    2. Melt butter in a large skillet over medium-high heat, tilting pan to coat bottom. Add bell pepper; cook, stirring constantly, 3 minutes or until tender.

    3. Reduce heat to medium-low. Add egg mixture; cook, without stirring, until mixture begins to set on the bottom. Draw a spatula across bottom of pan to form large curds. Continue cooking until eggs are thickened and firm, but still moist.
      Serve with salsa and sour cream.

      Makes 3 servings.
