Salsa Eggs

List of Ingredients
- 6 large eggs, lightly beaten
- 1 (4.5-ounce) can chopped green chiles, drained
- 1 jalapeño pepper, seeded and minced
- ¼ tsp salt
- Dash of ground red pepper
- 2 Tbsp butter
- ½ cup finely chopped red bell pepper
- Salsa
- Sour cream
Instructions
- Stir together first 5 ingredients in a bowl.
- Melt butter in a large skillet over medium-high heat, tilting pan to coat bottom. Add bell pepper; cook, stirring constantly, 3 minutes or until tender.
- Reduce heat to medium-low. Add egg mixture; cook, without stirring, until mixture begins to set on the bottom. Draw a spatula across bottom of pan to form large curds. Continue cooking until eggs are thickened and firm, but still moist.
Serve with salsa and sour cream.
Makes 3 servings.
