    Sausage Cream Gravy

    Recipe Introduction

    "A meal in itself over a hot buttermilk biscuit, sausage and gravy tops the list of 'foods that make you homesick' for transplanted Southerners."

    List of Ingredients

    ◦  1 pound ground pork sausage
    ◦  4 Tbsp all-purpose flour
    ◦  2 cups hot milk
    ◦  1 tsp salt
    ◦  1 tsp pepper
    ◦  ⅛ tsp Tabasco sauce

    Recipe

    Cook the sausage in a large skillet until browned, making sure to break up the meat as it cooks. Transfer with a slotted spoon or strainer to a paper towel, leaving the pan drippings.

    Stir the flour into the hot grease, stirring constantly and scraping the skillet of any residue (everything is part of the gravy). Cook and stir for about 2 minutes. Heat the milk in the microwave for 1 minute, or bring just to a boil in a saucepan on the stove. Add the hot milk, stirring the gravy until creamy and blended. Add the salt, pepper, and Tabasco sauce, continuing to stir and cook for about 5 minutes. If the gravy seems too thick, add more hot milk, and keep stirring.

    Add the crumbled sausage to the gravy, stirring it so that it will heat through. Serve immediately over hot biscuits, grits, fried potatoes, or cornbread, or sneak some just by itself!


    Makes about 4 cups

    I can confirm the author's sentiments! Besides Chicken Fried Steak, and as a transplanted Southerner, this is one of the meals I miss most!
