Savory Ham and Cheese Waffles

"These waffles alone are one of my most-requested items for breakfast-for-dinner—or 'brinner,' as my kids like to call it. The batter comes together quickly. And everyone seems to enjoy the waffles in one form or another: the kids drench them with syrup; Michael dips them in mustard; and I love them with syrup and a poached egg on top. A 'brinner' winner!"

â—¦ 2 cups all-purpose flour
â—¦ 1 tablespoon sugar
â—¦ 1 tablespoon baking powder
â—¦ 1 teaspoon salt
â—¦ 3 eggs
â—¦ 2 cups milk
â—¦ 1 tablespoon Dijon mustard
â—¦ 10 tablespoons unsalted butter, melted and slightly cooled
â—¦ ½ pound thinly sliced ham, chopped
â—¦ 1 cup grated sharp cheddar cheese
â—¦ Butter and pure maple syrup, for serving
Recipe
Preheat the oven to 300° F and set an oven rack in the middle position. Heat a waffle iron until very hot.
In a large bowl, whisk together the flour, sugar, baking powder, and salt. In a medium bowl, whisk together the eggs, milk, and mustard. Gradually whisk the liquid mixture into the dry ingredients. Then, stir in the melted butter, ham, and cheese.
Coat the waffle iron with nonstick vegetable oil spray. Pour the batter onto the iron, spreading it into the corners. Cook until golden brown, 2 to 5 minutes, depending on the waffle iron. Transfer to a baking sheet and keep warm in the oven while preparing the remaining waffles. Serve with butter and warm maple syrup.
