List of Ingredients
- 1 Tbsp butter
- 4 eggs
- 1/2 tsp minced rosemary
- 1 Tbsp hot or mild salsa
- 1 Tbsp sour cream
- Salt, pepper
Instructions
- Melt butter in 10-inch skillet. Beat eggs together. Stir in rosemary, salsa, sour cream, and salt and pepper to taste.
- Pour mixture into skillet and cook over medium heat until edges of omelet are set, 3 to 5 minutes. Lift up omelet so raw center flows under cooked portion. Cook until completely set, about 3 minutes longer.
Cut into 4 wedges. Serve 2 wedges per person.
